2 cans diced tomatoes (fire roasted, Mexican, or regular style)
2 cans petite diced tomatoes
1 med. jalapeño pepper
1 bunch cilantro
1 med. white onion
2 cloves garlic
1 pinch each of
- chili powder
- red pepper
- cumin
Salt and pepper
Pour 1 can diced tomatoes into blender. Coarsely chop jalapeño, onion and garlic. Cut off stems of cilantro. Add all to blender. Pour 2nd can diced tomatoes into blender and blend on high until smooth. Add spices and blend again on low. Pour into large bowl. Add petite diced tomatoes, lemon juice, and salt and pepper to taste. Stir. Enjoy with your favorite chips.
